vegan cardamom cookies @ 10:50 pm

vegan cardamom cookies

3/4 cup vegan margarine
1/2 cup of sugar
2 T of cardamom, (yep as in tablespoons- it isn't the same with less)
1 tsp corn starch
1 cup of all purpose flour
2 tsp baking powder

1/4 cup powdered sugar
1 more T cardamom

preheat oven to 375 degrees. begin by melting margarine, and mix with sugar, 2 T of cardamom, and corn starch. mix until well incorporated. add flour and baking soda- do not overmix. dough is best chilled overnight, but you can bake it immediately. dough should be thick and form a giant ball, not sticky. roll it into 1 inch balls, and in a separate bowl, combine powdered sugar and cardamom. roll each ball in sugar mixture. bake for about 10-12 minutes- until firm, but not hard.

the curse has been lifted... i had not only the best v-day ever, but possibly the one of the best days of my whole life on saturday.

klint and i rarely ever venture out of our burough in southeast, but the best gluten-free bakery is in the northwest part of town. we got there at 9 am, but apparently nothing in northwest opens before 11. after walking around a deserted trendy-third, we found coffee and crepes. we bought gluten-free goodies and stuff to make dinner, then headed back home and spent the afternoon in bed. ;)

for dinner, i made clams and spaghetti marinara with garlic, lemon, parsley, and fresh-grated romano. it went well with the gluten-free baguette from cascadia. there was one unlucky moment- i accidentally cracked down on a clam shell and my tooth still kind of hurts. but not bad that the worst part of the day was a little dull pain in my tooth. i forgot to take a picture, but it was just like this:

it was so damn tasty.

in other news, due to some inexplicable unfriendings and my lack of anything to say, i'm taking a livejournal hiatus. see you all soon....

amazingly comfy shoes for work + knee high boots that don't make me look like a hooker < $100 = TOTAL WIN.

i still have nothing to write about. all my good links have been used here: http://www.technoccult.com/ (which i find quite flattering!)

feng shui school is truckin' along nicely. i feel so dumb and yet knowledgeable simultaneously. four weeks/four quizzes and i'm done with FS101. it's hard to believe i'm really doing it, though i'm still lacking in confidence about it. and kinda skeeved about online class taking, but i bet it will pass.

going to california for my cousin's wedding, so add "wedding present" to my queue of 713 crafty things to do. peacock shower hooks are done, glass lamp and peacock vase in place; today is the curtain! pics will be forthcoming of our swank DIY moroccan bathroom. zee inspiration:

now for something more positive... for 2009 i predict that i will finally follow through some things i've been meaning to do for years. 2008 was the year of the snake to me- shedding old skin. 2009 is the year of Getting Shit Done.
